how do divorces work?
If they have children who have the right to see the children and how often?
How would the people married deal with jealousy?
How does one manage conflicts between co-wives? Should the husband get involved, or should he stay out of it and let the wives solve it?
And who would take who's last name or whatever...

Great hesja empire I don't see any real differences from a standard divorce. Visitation rights are a thing when a marriage breaks up now, and jealously is as well. There could be co husbands as well, you too seem to be thinking of this in a church tradition context, but for the sake of argument, it would be very similar to if your wife had a conflict with your sister in a traditional marriage. It would depend on the personalities of the people involved to decide who steps in and gets involved. No need for a law about it. And also like with standard marriage, you decide before you enter into it about name changes.

Since we generally agree that what is done between consenting adults in the bedroom is between them and them alone, we must concede that incest in that context should not be illegal.

Yes, in certain situations. There is a possibility of an unhealthy power dynamic or grooming being involved, making the consent part questionable, but as long as those factors aren’t in play, for example if we’re talking about 2 cousins who never even met until they were both 18+, I think it’s okay. The discussion does become more nuanced when we talk about having kids though, what with the possible birth defects and such. But if you’re in something like the cousin situation I described and you don’t plan to have kids I think you should be allowed to do whatever. I do obviously still think it’s weird and gross because we’re evolved to have that reaction instinctually to prevent aforementioned birth defects.

There is still the danger of of grooming or something in certain situations, like if you meet an older relative when you’re still a minor and get into a relationship once you’re an adult.

There's grooming and unhealthy power dynamics in non-related relationships as well. And there are generally laws to address that. Having Children is separate issue, if related. I don't think I could disallow it. The genetics is a problem to be sure, but it's actually safer than someone reproducing who has Huntingdon's Disease, Osteogenesis Imperfecta, or any one of dozens if not hundreds of genetically transmitted conditions. I too, am not a fan of this. But to be ideologically consistent, I have to allow it.
Cousins isn't a good example as it's already legal in many, many places.
I think that what you might see as "polygamy" is only polygyny - a situation where one man has multiple wifes, who aren't in relationship with eachother (at least not formal one). What I have on mind is a group marriage - wherein the family unit consists of multiple husbands and multiple wives of legal age (and non-binary spouses too but non-binary aren't recognised by the law yet).
Of course both of these situations are technically polygamy but the relations between spouses are different and I think we can all agree that polygyny (and polyandry of course) is just a bad system for oblivious reasons.
When it comes to divorce it's easy - you married (for example) four people, you are divorcing four people. All the procedures stay the same.
And about the last name - I guess it's just up to you
Some people hyphenate their last names when they get married, that could get out of hand in some situations lol
